~Fresh Strawberry Pie~

     On Saturday I made my first fresh strawberry pie for the season, and we enjoyed it. :) I LOVE fresh strawberries!  I thought I would share the recipe on here because it is so fast, easy...and good!
The recipe is from my dear friend, Roxanne Shiery.

Fresh Strawberry Pie

1 9" Baked Pie Shell
1 Quart Strawberries
1 Cup Water
1 Cup Sugar
2 1/2 T. Cornstarch
1 T. Corn syrup
1 Small Box Strawberry Jello

Cook water, sugar, cornstarch, and corn syrup until thick. Add jello mix until dissolved. Cool completely. Wash and cut up berries, place in pie shell. Top with cooled gaze. Top off each serving with cool whip.

     My sister, Brittany,  gave me the easiest pie crust recipe in the world. You make it in your pie pan [Very minimal dishes with this one. :)]. It works great for any pie that doesn't need a top crust such as the pie above or a pudding pie.

Pie Crust

Mix in Pie Pan
    1 1/2 Cup Flour
    1 1/2Tsp. Sugar
    1 Tsp. Salt.
In Cup
    1/2 Cup Vegetable Oil
    2 TBS. Milk
-Pour into pie plate, mix with fork until mostly mixed then finish with hands.
- Pat with hands to fit pie plate
- Back @ 350 for 20 Minutes, or until browned.

I think I have this same recipe for Strawberry Pie and it is easy and delicious; however, I rely on Pet Ritz pie shells but this one does sound easy so I will give it a try. Thanks for sharing.

Hey, girl! Kent, Khloe, and I are going over for lunch to Steph and Chip's (our neighbour's) place for lunch tomorrow. I am to bring the dessert, so your recipe sounded so yummy that I just had to make a pie! Looks like it is going to be a great success! Thanks for sharing!
