Another Update

     Michael is feeling much better, but he was not feeling strong enough to return to work just yet... He might try tomorrow. He is on two antibiotics for 10 days, then going for a follow up visit to the GI doctor to see if they can tell what causes this and if farther testing is needed.
    I am finally feeling caught up on my sleep.... My house however, is not caught up yet, so going to tackle that next. :)

Hospital Update

     We are getting to go home soon and Michael is feeling some what better...so we are very thankful for that! It will be so nice to be home and sleep in a bed. :)

UNC Hospital

     I am writing this post from my chair beside Michael's hospital bed. We came to the ER last night around 7pm with a sever pain in his side. After many test and doctors they found the pain was caused by an inflamed colon. The cause of it being inflamed is yet to be determined, yet they think it is nothing serious such as cancer, but say they will have to do more tests to find out what is causing it. We are hear until Wednesday for those tests unless they decide to do them as an outpatient, then can probably go home tomorrow.
     I went home this afternoon to get 4 hours of sleep {after being up for 30hrs with 2 hrs of sleep during that time}, to take care of Alli, and get some things we needed. Now I am back for the night.
     They have been giving Michael antibiotics and saline through an IV and he is feeling somewhat better thanks to that. Please continue to pray that he continues to get well and the doctors will be able to find out what is causing this.

Praying With The Homeless

     Today was our Saturday to do the Food/Outreach Ministry at our church. We generally pass out a packed lunch to the homeless and needy and pray with them if we can. I didn't take a camera this time, but snapped this picture of Michael praying with two homeless men on my phone. I am thankful we have this ministry that provides us with opportunities like these.....

A Day...

     Today is a busy day full of cleaning, laundry, paying bills, making a grocery list, etc. It is blue sky, sunny, and supposed to reach at least 80 today. :) Things are getting green around here and there are flowers in our garden on the verge of showing their pretty faces!
     Tonight we are going to the Parker Homecoming to celebrated our 6 month anniversary. :) We will hear the Harvester's Quartet, Ivan Parker, and the Perrys.
     We are also trying to get everything in order for the weekend as it is a rather busy one... our outreach/food ministry tomorrow, grocery shopping, etc. and Sunday has it's usual responsibilities, and a nursing home to visit Sunday night.

Moose

     My dear sister sent me these pictures of this young moose they saw close to their house. I thought the photography was good and the moose is still quit cute and "good-lookin" :). When they grow up they tend to not be the prettiest things in the world, but still some how in my opinion, a majestic animal. I got to watch two huge bull moose fight once in the wild, and that was an awesome experience!     
      Here are some random "Moose Facts"....A bull moose's average weight is 1,200Lbs and a females average weight is 900Lbs. At the shoulders a moose averages between 6 1/2-7 1/2Ft at the shoulders, and bulls rack (antlers) can be 6ft across. They are excellent swimmers and can dive under water for long periods of time, and they can run up to 35 MPH. They are generally harmless animals unless they feel threatened, then their attack can be deadly. Moose can eat up to 50-60 Lbs of foliage a day.

~Fresh Strawberry Pie~

     On Saturday I made my first fresh strawberry pie for the season, and we enjoyed it. :) I LOVE fresh strawberries!  I thought I would share the recipe on here because it is so fast, easy...and good!
The recipe is from my dear friend, Roxanne Shiery.

Fresh Strawberry Pie

1 9" Baked Pie Shell
1 Quart Strawberries
1 Cup Water
1 Cup Sugar
2 1/2 T. Cornstarch
1 T. Corn syrup
1 Small Box Strawberry Jello

Cook water, sugar, cornstarch, and corn syrup until thick. Add jello mix until dissolved. Cool completely. Wash and cut up berries, place in pie shell. Top with cooled gaze. Top off each serving with cool whip.

     My sister, Brittany,  gave me the easiest pie crust recipe in the world. You make it in your pie pan [Very minimal dishes with this one. :)]. It works great for any pie that doesn't need a top crust such as the pie above or a pudding pie.

Pie Crust

Mix in Pie Pan
    1 1/2 Cup Flour
    1 1/2Tsp. Sugar
    1 Tsp. Salt.
In Cup
    1/2 Cup Vegetable Oil
    2 TBS. Milk
-Pour into pie plate, mix with fork until mostly mixed then finish with hands.
- Pat with hands to fit pie plate
- Back @ 350 for 20 Minutes, or until browned.

Thank You Mandy!

     Once in a while having family members with different opinions does turn out to be a blessing. :) Marcus and Mandy bought this house last year and in their back yard the previous owner had planted tons of daffodils, lillies, and irises....maybe even some crocuses.....Well, Mandy would rather have all her flowers in pots, so was very happy for me to come dig some of them up. :) That made me very happy because I was wanting to find someone who would be willing for me to come and dig some up so I could plant them in our flower bed that is still in the making process....So, yesterday I did just that. This summer should be full of surprises as to what color the flowers will be etc. I had planted some bulbs already.... thus the bare dirt parts you see, because they haven't come up yet.
