Quick Amazing Hot Chocolate

I guess you could say I am a picky hot chocolate fan.... Most of the time it is to sweet and by the time you are done, you have a sick feeling in your stomach. :(  I remember reading this little recipe some time back on a random blog I was looking at. I decided to try it tonight and was very happy with my hot chocolate! :)

You just warm up some milk ( I did it in my mug in the microwave) add chocolate syrup to the desired amount, then add some flavored creamer, such as carmel or french vanilla. (I had some of the later) I also added a tiny bit of cinnamon to mine....However, that would be entirely up to what you like. I just needed a bit of whip cream to add to the top.:)

~ Chicken Alfredo ~

Some people were wanting this recipe, so I thought I would share it on here for anyone else interested. :) It is an extremely easy, fast recipe but tastes great!! You will never again want to use the icky canned Alfredo sauce. :) If anyone has found some of that stuff that tastes great...let me know, because I have never tried one that I really liked......

Chicken Alfredo *

1Large Can of chicken or 3 chicken breasts (Cut up and grilled)
6-8oz Fettuccine noodles (cooked as directed)
1/2 C Butter
1 Can Evaporated milk
3/4-1C Parmesan cheese
Salt & Pepper

While noodles are cooking - In sauce pan over medium heat cook butter, milk, and cheese until bubbly, add pepper to taste, layer noodles, chicken, and sauce.

You can add whatever seasonings you like... I like to add sauteed onions in with my chicken when cooking it as well as some crushed garlic.

*This recipe I originally recieved from my dear friend Roxanne Shiery. :)

An Update

I hope everyone had a wonderful Thanksgiving! We did, and it was nice having Nathan and Debbie here for a couple days so everyone could get together. I haven't been posting on here much, or doing much of anything for that matter, because I was not feeling well. Finally, it got so bad, we made a trip to the ER for what everyone thought was gallbladder problems. However, after  several test, it was determined, it was a bad case of acid reflux, with maybe an ulcer or something like that thrown in with it. Thankfully, medicine is helping, and I am feeling much better and finally excited once again for Christmas and FOOD!!! :)

Michael is enjoying his new job and likes his co-workers. As a result of his work, he was able to give our oldest niece an autographed picture of Scotty McCreery(She is a huge fan of his). Her reaction was priceless. We were going to wrap it up for her for Christmas, but we couldn't wait.

Below are some pictures from Thanksgiving, the Burlington Christmas Parade, and the UNC/Duke football game we went to. Hope you enjoy them.

NC Botanical Garden

Today we were down in Chapel Hill passing out house cleaning fliers and it was such a beautiful day, we decided to go to the Botanical Garden they have there. It was enjoyable to walk through, and I must admit, had some odd stuff, but it was cool. I am sure it is more colorful in the summer, but the fall foliage is gorgeous!

This was a Chess Game.

New Security Officer

Michael received an email about him sent to all the current employees and supervisors in the police division. It was  written by the Chief of Police, UNC Hospitals, his soon to be new boss. I was rather proud and wanted to share.... Michael will probably strangle me later. :)

     "Guys and Ladies,
As you all know we are losing Ed Clemons to retirement. We have found a great person to literally follow in Ed's footsteps. Michael Evans is already familiar to most of you. Michael worked for Valet Parking at ER entrance. He is familiar with our operation and is accustomed to spending a great deal of time outside. If you have dealt with Michael, you know that he has great customer service skills and is a nice young man. Please welcome Michael and assist him in adjusting to his new position. Thanks.

Just Fishin'

     This past weekend Debbie and Nathan {sister & brother in-law} were here visiting and we all spent Saturday evening over at Bo's {brother-in-law} pond fishing. I can't stand fishing really....it's ok as long as I don't get close to any fish. :) I love fish tanks, but that is where I draw my line. However, it is good family time, and I am learning to enjoy it more....Here are some pictures from that evening. {You can click on each picture to make them bigger.}

I love this picture... if you look closely, you can see Josh's feet don't touch the ground!

DIY Photo Coasters

I have been wanting to try these for a while now... Well, ever since I saw the idea and tutorial over here on my friend Karen's blog, The Pink Parsonage. Last night my friend, Bethany, came over and we tried it out together. I was really happy with how they turned out ( Some things I would do a little different next time, but that's how things go the first time around.) and probably will make them again sometime. Anyways, here are some pictures of the little adventure....

Putting on several layers of Mog Podge.

Spraying on several layers of sealer.

The finished project.

Of course, a hot cup of chai tea was needed as well. :)

The Accident

Yesterday Michael was involved in a 5 car pile up, but thankfully wasn't hurt and the car was just scratched up some. He happened to have the camera in the car and snapped a couple pictures, but it was after they had cleared a lot of if up and moved cars so they could get to the people trapped in the first car that was hit. The big construction truck was the one that caused the accident. It is believe that he ran the light. Both people from the truck and car were rushed to the ER with injuries.

In My Seat

http://youtu.be/cLj4akmncsA?hd=1

Above is the link to a very powerful story of the pilot who was to be flying flight 11 that horrific September 11th. For whatever reason I could not post the video here off of YouTube. I would strongly suggest watching it. It is very powerful and worth your time!

The Rearranged Living Room

We were desperately needing more seating in our living room, other than what we had... Just a couch. We don't have much space, so the chairs needed to be small, no "big grandpa" recliners, etc. {Although they are extremely comfy.:)} We got these chairs for free, and even though the color is not amazing(they do fit in rather well...), they are in really good condition, and the perfect size. I had quite a time trying to rearrange everything, but I think I got it. :) It feels much more cozy in here....

Also, I got a little desk {Thank you Mama for swapping with me!} in the kitchen to put our computer on, and have a little "work" space. I love it! :)
